Initial reports suggest the male driver had swerved to avoid hitting a cow before his car collided head-on into a tree.
He was trapped in the vehicle for some time before being freed by rescue crews on the ground.
The Roma-based helicopter was tasked to the scene, 10 kilometres east of the town of Yuleba, at 3.30am.
The patient was airlifted by the Surat Gas Aero-Medical Service helicopter to the Princess Alexandra Hospital.
He was in a critical but stable condition.
